S\u00ec ma di qualit\u00e0"},"content":{"rendered":"<p>Sopra un hamburger di <strong><em>Blend<\/em><\/strong>, famoso locale che fa hamburger\u00a0a Parigi.<\/p>\n<p>Mc Donald&#8217;s \u00e8 in crisi (ne avevamo accennato in <a title=\"Sementi, biodiversit\u00e0, la GD e la qualit\u00e0 del cibo\" href=\"https:\/\/www.giuseppecaprotti.it\/sementi-biodiversita-la-gd-e-la-qualita-del-cibo-2\/\">Sementi, biodiversit\u00e0, la GD e la qualit\u00e0 del cibo<\/a>) dal\u00a02013 e\u00a0ci\u00f2 si riflette sui suoi risultati\u00a0economici&#8230;<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Mc-Donald-s-24-gennaio-2015.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-20267\" title=\"Il Sole 24 ore 24 gennaio 2015\" src=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Mc-Donald-s-24-gennaio-2015.jpg\" alt=\"\" width=\"318\" height=\"607\" \/><\/a><\/p>\n<p>Il picco di questa fase negativa \u00e8 stato registrato, pochi giorni fa, quando\u00a0\u00e8 stato rimosso l&#8217;amministratore delegato <strong>Don Thompson<\/strong>, che era sulla poltrona da n\u00b0 1\u00a0da soli 30 mesi.<\/p>\n<p>Ovviamente, come era gi\u00e0 successo per altre notizie, (v. <a title=\"Coca- Cola conferma : fino a 1800 licenziamenti\" href=\"https:\/\/www.giuseppecaprotti.it\/coca-cola-conferma-fino-a-1800-licenziamenti\/\"><strong>Coca- Cola<\/strong> conferma :\u00a0licenzier\u00e0 fino a 1800 dipendenti<\/a> e <a title=\"Multa di 1 miliardo di \u20ac al \u201cCartello dello shampoo\u201d\" href=\"https:\/\/www.giuseppecaprotti.it\/ulta-di-1-miliardo-di-euro-al-cartello-dello-shampoo\/\">Multa da 1 miliardo di \u20ac\u00a0al cartello dello shampoo<\/a>), il Sole 24 ore, \u00a0giornale di <strong>Confindustria<\/strong> si \u00e8 ben guardato dal darla e dall&#8217;analizzarne le ragioni.<\/p>\n<p>Le\u00a0cause\u00a0di questa <em>impasse<\/em>\u00a0\u00a0possono essere state:<\/p>\n<p>1)\u00a0interne all&#8217;azienda di Oak Brook, Illinois\u00a0, come l&#8217;estensione troppo ampia dei men\u00f9 , che comporta quasi 200 articoli: si va dal men\u00f9 ad un dollaro, ad alternative vegetariane e alle insalate.<\/p>\n<p>Queste <em>extension line<\/em> degli articoli del men\u00f9, in atto da svariati anni, hanno causato\u00a0 problemi ai 14&#8217;200 ristoranti americani (su 35&#8217;000 nel mondo), costringendo dipendenti e soprattutto <em>franchisee<\/em> ad allungare i tempi in cucina e ad acquistare attrezzature considerate inutili.<\/p>\n<p>Chi ha diminuito gli articoli in assortimento, come <strong>Burger King,<\/strong> ha alzato le vendite, a superficie comparabile (senza nuove aperture) del 3,6%, negli Usa e in Canada, mentre quelle di Mc Donald&#8217;s sono scese, durante lo stesso periodo (terzo trimestre 2014), del 3,3%.<\/p>\n<p>Problemi con i sindacati (*), finiti su tutti i giornali del mondo&#8230;<\/p>\n<p><a href=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Mc-Donalds-7-aprile-20141.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21421\" title=\"Il Sole 24 ore 7 aprile 2015\" src=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Mc-Donalds-7-aprile-20141.jpg\" alt=\"\" width=\"819\" height=\"383\" \/><\/a><\/p>\n<p>o la vendita di carne avariata in Cina non hanno migliorato la situazione di Mc Donald&#8217;s.<\/p>\n<p>(*) un lavoratore alle dirette dipendenze di Mc Donald&#8217;s oggi, a New York City, percepisce 8,75 $ l&#8217;ora. Dal 1\u00b0 luglio il suo stipendio orario dovrebbe passare a 9,90 $ l&#8217;ora ma:<\/p>\n<p>a) i sindacati reclamano 15 $ l&#8217;ora, <a title=\"Walmart alza il salario a 500\u2019000 dipendenti\" href=\"https:\/\/www.giuseppecaprotti.it\/walmart-alza-il-salario-a-500000-dipendenti\/\">come nella grande distribuzione<\/a><\/p>\n<p>b) l&#8217;aumento riguarder\u00e0 solo 90&#8217;000 dipendenti diretti\u00a0mentre 750&#8217;000 dipendenti dei franchisee Mc Donald&#8217;s ne saranno esclusi. Fonte: NY TIMES del 7 aprile 2015<\/p>\n<p>2) quelle esterne, dovute ai cambiamenti di mercato e di visione dell&#8217;azienda da parte dei consumatori:<\/p>\n<p>Mc Donald&#8217;s, simbolo del fast food made in USA, \u00e8 stata messa in discussione da film\u00a0 come &#8220;<em>Super Size Me<\/em>&#8220;, &#8220;<em>Food Inc<\/em>&#8221; o da\u00a0libri come &#8220;<em>Fast Food Nation: The Dark Side of the All-American Meal&#8221;<\/em>.<\/p>\n<p>Il problema d&#8217;immagine di <span style=\"color: #ff6600;\">Mc Donald&#8217;s<\/span> persiste da tempo ed \u00e8 aggravato dal fatto che\u00a0l&#8217;azienda usi <span style=\"color: #ff6600;\">conservanti e cibo surgelato<\/span>.<\/p>\n<p>La crisi di Mc Donald&#8217;s\u00a0potrebbe riguardarci da vicino perch\u00e9 la situazione dei nostri bambini \u00e8 molto simile a quella dei bambini statunitensi, come avevo gi\u00e0 evidenziato , svariati anni fa, in <a title=\"\u201cA scuola di cibo\u201d\" href=\"https:\/\/www.giuseppecaprotti.it\/a-scuola-di-cibo-2\/\">&#8220;A scuola di cibo&#8221;<\/a>&#8230;<\/p>\n<p><a height=\"634\" \/><\/a><\/p>\n<p>Il nuovo Ceo di Mc Donald&#8217;s ha annunciato l&#8217;eliminazione degli antibiotici dai polli venduti : questo \u00e8 un buon segnale&#8230;<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Mc-Donalds-no-antibiotici.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full \/><\/a>\u00a0&#8220;Sette&#8221; del 20 marzo 2015<\/p>\n<p style=\"text-align: left;\">ma non basta e soprattutto giunge un po&#8217; tardi, tanto che ieri\u00a0S &amp;P ha tagliato il rating di Mc Donald&#8217;s<\/p>\n<p><a href=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Mc-Donalds-S-P-taglia-rating-5-maggio-2015.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21769\" src=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Mc-Donalds-S-P-taglia-rating-5-maggio-2015.jpg\" alt=\"Il Sole 24 ore del 5 maggio 2015\" width=\"822\" height=\"777\" \/><\/a><\/p>\n<br\/><hr\/><br\/>\n<p>Qual \u00e8 quindi la soluzione per non\u00a0privarsi del piacere di un buon hamburger?<\/p>\n<p>Semplicemente mangiandone\u00a0\u00a0nei ristoranti, che negli USA vengono definiti <span style=\"color: #ff6600;\"><em>fast-casual<\/em><\/span>,\u00a0 fatti con <span style=\"color: #ff6600;\">ingredienti freschi, di primissima qualit\u00e0 e cotti\u00a0al momento!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a <em>hamburger basco da Quality Beef, viale Pasubio 8, Milano<\/em><\/p>\n<p>Infatti , negli USA, il\u00a0settore\u00a0\u00a0<span style=\"color: #ff6600;\">\u00a0<\/span><em><span style=\"color: #ff6600;\">fast- casual<\/span> <\/em>(*),\u00a0composto da\u00a0ristoranti che vendono hamburger ad un prezzo pi\u00f9 alto dei <em>fast food<\/em> , sta crescendo del 10,5% rispetto ad un +6,1% delle catene a basso prezzo.<\/p>\n<p>E\u00a0Mc Donald&#8217;s \u00a0l&#8217;ha capito tanto che <a title=\"Mc Donald\u2019s entra nel segmento premium\" href=\"https:\/\/www.giuseppecaprotti.it\/mc-donalds-entra-nel-segmento-premium\/\">\u00e8\u00a0 entrata nel segmento premium\u00a0<\/a><\/p>\n<p><a href=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/economist-logo3.gif\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-20370\" src=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/economist-logo3.gif\" alt=\"\" width=\"183\" height=\"89\" \/><\/a><\/p>\n<p>Questo \u00e8 un ottimo segnale per la salute degli Americani, come un altro segnale positivo \u00e8 costituito dal fatto che la FDA (<em>Food and Drug Administration<\/em>) il 25 novembre 2014, abbia varato un regolamento che, nell&#8217;arco dei prossimi due anni, obbligher\u00e0 le catene con pi\u00f9 di 20 ristoranti ad esporre i propri ingredienti e il numero di calorie per ogni piatto.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.giuseppecaprotti.it\/wp-content\/uploads\/Paolini-sugli-hamburger-il-sole-24-ore-1-marzo-2015.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-20846\" \/><\/a><em>anche in Italia crescono le hamburgherie di qualit\u00e0, come fa notare il gastronauta Davide Paolini<\/em><\/p>\n<p>(*) I ristoranti <em>fast-casual, <\/em>come, ad esempio,\u00a0<strong>Chipotle<\/strong><em>, <\/em><strong>Shake Shack<\/strong>, etc.<em>\u00a0<\/em>\u00a0hanno altri vantaggi rispetto a Mc Donald&#8217;s:<\/p>\n<p>personalizzazione, servizio ed un ambiente da ristorante, non da <em>fast food.<\/em><\/p>\n<p>Molto interessante l&#8217;evoluzione della\u00a0catena Shake Shack che si \u00e8 appena quotata in Borsa e il cui titolo \u00e8 schizzato da 21 $ a 47 $ in un giorno solo, dal 29 al 30 gennaio 2015.<\/p>\n<p>Presente in molti stati degli USA la formula Shake Shack sta prendendo piede anche a Mosca, a Londra, Istambul, Dubai, Beirut\u00a0etc.<\/p>\n<p>E dire che la sua storia nasce nel 2001, con un chiosco a rotelle in Central Park&#8230;.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-34870
