Ma alla luce delle ultime news arrivate dall\u2019America, tale valore potrebbe essere rivisto al rialzo.<\/p>\n<p><strong>GHOST KITCHENS CON\u00a0<\/strong><a href=\"https:\/\/www.walmart.com\/\"><strong>WALMART<\/strong><\/a><\/p>\n<p>Pochi giorni fa infatti, il gigante del retail a stelle e strisce\u00a0<a href=\"https:\/\/www.foodweb.it\/2021\/02\/walmart-investe-massicciamente-nellinnovazione\/\">Walmart, pochi giorni dopo l\u2019annuncio del nuovo piano di investimenti,<\/a>\u00a0ha annunciato il lancio di un rivoluzionario progetto pilota, in collaborazione con la startup canadese Ghost Kitchens, il cui nome dice gi\u00e0 molto.<\/p>\n<p><strong>La ghost kitchen, installata all\u2019interno di un supermercato in Ontario,<\/strong>\u00a0permetter\u00e0 agli utenti di ordinare cibi pronti tramite l\u2019app del retailer o anche tramite\u00a0<a href=\"https:\/\/www.foodserviceweb.it\/2021\/03\/05\/uber-eats-torna-libera-revocato-il-commissariamento\/\">Uber Eats<\/a>,\u00a0<a href=\"https:\/\/www.foodserviceweb.it\/2021\/03\/08\/doordash-i-profitti-restano-un-miraggio\/\">Doordash<\/a>\u00a0e altri, ritirandoli poi all\u2019orario convenuto all\u2019interno del punto vendita.<\/p>\n<p><strong>AMBIZIONE E INNOVAZIONE<\/strong><\/p>\n<p>L\u2019iniziativa verr\u00e0 poi estesa poi in altre localit\u00e0 in Ontario e Quebec. Il\u00a0<strong>Presidente di Ghost Kitchens, Marc Choy<\/strong>, ha infatti affermato: \u201c<em>Il nostro obiettivo \u00e8 aprire una Ghost Kitchen ogni 12 km in tutto il Canada e poter raggiungere ogni canadese, in ogni mercato urbano entro 30 minuti, 24 ore su 24, 7 giorni su 7<\/em>\u201c.<\/p>\n<p>Il portale The Spoon fa notare che la missione dovrebbe essere possibile quando il tuo men\u00f9 propone semplicemente cheesecake, insalata e\u00a0\u00a0gelato.<\/p>\n<p><strong>HORECA E RETAIL<\/strong><\/p>\n<p><strong>Il progetto canadese pu\u00f2 essere davvero considerato come il primo passo verso un\u2019ulteriore evoluzione del mercato delle ghost kitchen<\/strong>. Its operating model and technology-led solution enables it to produce meals from all of its partners within a single kitchen. Through this partnership, it will open kitchens in five Walmart stores, starting with its St. Catherines, Ontario Supercentre. Customers will be able to order freshly made meals in-store and online for contactless pickup or delivery.<\/p>\n<p>Source: IGD Canada<\/p>\n<p>Supporting online and pickup models<\/p>\n<p>Restaurant brands have increasingly turned towards ghost kitchens during the pandemic. Most companies experienced in-dining restrictions and temporary closures, driving significant growth in pickup and delivery orders. For many, this represents a more economic model until full dining can be resumed, while some companies are likely to move to a ghost kitchen operation on a more permanent basis. For retailers, these types of partnerships can support a more profitable and sustainable foodservice operation, given the better utilisation of the kitchens. They also enable retailers to repurpose excess in-store space.<\/p>\n<p>Competing for share of stomach<\/p>\n<p>This deal echoes\u00a0<a href=\"https:\/\/retailanalysis.igd.com\/news\/news-article\/t\/kroger-launches-in-store-ghost-kitchens\/i\/26871\"><strong>Kroger\u2019s partnership with ClusterTruck<\/strong><\/a>\u00a0in the US. The retailer has opened two ghost kitchens within its stores in Indianapolis and Columbus. This aligns with consumers seeking more varied and convenient meal solutions, a key trend driven by the pandemic. As the crisis eases, retailers will be looking to consolidate the gains made over the last year and retain the increased share of food spend seen in 2020. Tapping into consumers\u2019 broader food needs increases the addressable market opportunity for Walmart, while also creating a more complete food proposition, supporting Walmart&#8217;s one-stop shopping model. The beauty of this model is that it enables shoppers to pick up all their core food needs in one trip; groceries and ingredients for meal planning, convenience foods and food-for-now. These types of partnerships can support a more profitable and sustainable foodservice operation for retailers, given the better utilisation of the kitchens. They also enable retailers to repurpose excess in-store space.<\/p>\n<p>The ghost kitchen model<\/p>\n<p>Ghost\u00a0kitchens have grown in popularity, enabling existing restaurant operators and new companies to operate without the costs associated with physical locations. They can also be opened in industrial units, where the leasing costs are lower compared to street-facing outlets. In part, this has been enabled by the emergence of on-demand delivery platforms such as Uber Eats, Postmates and DoorDash. UberEats has also been able to optimise its data capabilities to suggest new concepts to existing restaurant operators, helping them to tap into unmet demand within specific catchments.
