Consumi: piacciono i prodotti Dop, residuo zero e glifosato free

Secondo l’Osservatorio Immagino di GS1 l’indicazione made in Italy non è più sufficiente a riempire i carrelli della spesa
L’effetto inflazione continua ad alleggerire il carrello della spesa, ma ci sono alcuni prodotti in controtendenza. Tra questi le Dop (Denominazione di origine protetta), quelli a residuo zero e quelli privi di glifosato.
A dirlo è la 15esima edizione dell’Osservatorio Immagino di GS1 Italy, lo studio semestrale che monitora i principali trend della spesa degli italiani analizzando le etichette di oltre 139mila prodotti tra food e non food, i quali hanno sviluppato oltre 47,5 miliardi di sell out, pari all’83,1% di quanto venduto da ipermercati e supermercati nel mercato totale del largo consumo in Italia.
“Industria e distribuzione arricchiscono continuamente le etichette di nuove informazioni, ritenendole un importante mezzo di comunicazione con lo shopper”, riassume Marco Cuppini, research and communication director di GS1 Italy.
Il made in Italy non basta più
I prodotti che richiamano il made in Italy in etichetta si confermano al primo posto sia per numero di prodotti (27,7% delle referenze analizzate) sia per fatturato aggregato (28,3% del totale) ma a crescere, per via dell’inflazione, è solo il dato in valore, +7,4% per un totale di 11,3 miliardi. I volumi acquistati, invece, sono diminuiti del 4,5 per cento.
Crescono le Dop: +1,6% a volume e +9,1% a valore
Crescono però, sia a volume, sia a valore, i prodotti a denominazione di origine protetta, rispettivamente dell’1,6%, e del 9,1 per cento. Non solo: anche la territorialità e l’attenzione ambientale registrano un incremento del 14,9% a valore e del 10,6% a volume.
Ma chi compra i prodotti Dop? “I principali profili di acquirenti di questi prodotti fanno riferimento a consumatori attenti alla qualità, generalmente disposti a spendere di più per prodotti che garantiscano un elevato standard qualitativo, di eccellenza e autenticità – rileva Marco Cuppini – Ma anche amanti della tradizione che apprezzano i metodi di produzione ed il legame con il territorio. Ancora, consumatori consapevoli, informati e attenti alle etichette, che cercano prodotti con certificazioni di origine e qualità, sensibili agli aspetti etici e ambientali lega- ti alla produzione alimentare. Spesso sono anche gourmet e appassionati di cucina che cercano ingredienti di alta qualità per le loro preparazioni culinarie. Infine non va dimenticato il crescente numero di turisti e consumatori internazionali che durante i loro viaggi desiderano portare a casa un pezzo dell’esperienza gastronomica vissuta”.
La chimica non piace
Ottime performance anche per i prodotti in cui in etichetta si legge un riferimento esplicito al non impiego di prodotti chimici durante la fase di coltivazione.
Cresce infatti l’acquisto di prodotti senza o con uso limitato di pesticidi (+4,1% a volume e +10,7% a valore), quelli a residuo zero/zero residui/senza residui (+43,4% a volume e +67,4% a valore), e quelli glifosato free (+34,2% a volume e +42,2% a valore).
Bene anche i prodotti vegani, che registrano un incremento dello 0,2% a volume e dell’11,9% a valore.
Il packaging e la riciclabilità
Anche nel 2023 il reparto del freddo è rimasto quello in cui viene maggiormente comunicata “on pack” la riciclabilità delle confezioni, presente sul 76,4% delle referenze contro il 73,2% del 2022. Conferma anche per il secondo posto del fresco, con il 66,2% di confezioni parlanti, in crescita annua di +4,4 punti percentuali. A seguire, al terzo posto, l’ortofrutta con il 64,2% (61,9% nel 2022).
Fruttato è il claim dell’anno 2023
Infine, una riflessione sui gusti riportati in etichetta, che secondo l’Osservatorio sono 13 e cioè salato, aromatizzato, acido, gustoso, piccante, saporito, amaro, dolce, speziato, agrodolce, esotico, umami e fruttato. Proprio quest’ultimo, ottavo gusto per valore delle vendite, con oltre 46 milioni di sell-out generati da 160 prodotti a scaffale, ha evidenziato un trend decisamente brillante: +24,4% a valore e +5,7% a volume.
Conoscere le tendenze è bello ed interessante ma, e l’ho già detto, forse, oltre alla fotografia dei consumi, la spesa andrebbe spiegata : c’è una grossa differenza tra certificazioni e definizioni commerciali, come, ad sempio, nel caso attuale della Coop. Ci sono prodotti seri, certificati come quelli Dop ma se si approfondisce un pò, ad esempio, la maggioranza dei loghi riguardanti il “made in Italy” sono pure invenzioni, che alimentano solo l’italian sounding. Per non parlare delle problematiche sottostanti, legate ai prodotti ultra trasformati . Fruttato, ad esempio, cosa significa?
Sarebbe bello che la svolta arrivasse con questa iniziativa molto interessante ed intelligente : Codice a barre, 22 multinazionali – tra le quali Lidl, Barilla, Alibaba, L’Orèal – lo sostituiranno con il QR code standard GS1.
Forse, se le informazioni venissero uniformate e rese obbligatorie, nel senso anche della tutela della salute oltre che del marketing, il QR Code potrebbe risolvere anche il problema dell’etichettatura degli alimenti che, con il Nutriscore, è in stallo da tempo. Magari con l’aiuto della blockchain?
Ad oggi i metodi per ingannare i consumatori sono infiniti, come dimostra il caso dei condimenti a base di olio extravergine. E il mondo della politica non ha trovato accordi per arginarli e tutelare la salute degli utenti finali.
Forse GS1 Italy, oltre a fare – legittimamente – marketing potrebbe dare un suo contributo nell’orientare meglio il consumatore.
P.S.: il Nutri- score non garantisce che i cibi non siano ultraprocessati. Lo si vede dal voto – B (il miglior voto possibile essendo A) – che ha ottenuto la pizza ai bastoncini di pesce che, con il Nutri- Score diventerebbe “sana” (!!!) ma lo dice anche uno dei grandi esperti del settore, il medico Chris van Tulleken:
“Un buon quarto dei cosidetti alimenti di alta qualità [valutazione A] sono cibi ultraprocessati, … a base vegetale e riformulati per avere un basso contenuto di grassi, zuccheri e sale” .
…”E’ quindi possibile che i dolcificanti artificiali a basso contenuto calorico contribuiscano all’aumento di malattie metaboliche come il diabete di tipo 2 in tutto il mondo… Spero vi sia ormai chiaro che assegnare un colore verde intenso a una bevanda dietetica sia un pò fuori luogo”.

Il Nutri- score è semplicemente un sistema di etichettatura migliorabile, di fronte al quale non vi sono alternative valide, ad oggi.
Come dice Camille Perrin, Ufficio europeo dell’unione dei consumatori : l’etichettatura unica, chiara è : “un primo passo , molto importante , per mostrare che i poteri pubblici antepongono la salute degli europei agli interessi economici”
